How to make
Mussels are cleaned of sand, shell growths and algae with a brush. If there are broken or open mussels, they are thrown away.
They are transferred to a deep container with water, stirred and as soon as they get a wet, they are drained and the water is thrown away.
The mussels strained from the water are placed in a saucepan on a high heat, the chopped cloves and olive oil are added. Cover the pot with a lid and shake vigorously until all the mussels open, but no more than 4-5 minutes. If there are any unopened mussels left, they are discarded.
Alfredo sauce: Add the cooking cream to the melted butter in a pan, stir until the mixture is homogenized, then add the egg yolks and cook for another 2-3 minutes without boiling the mixture.
Add freshly grated Parmesan, finely grated lemon peel and fresh lemon juice to taste.
The mussels are transferred to a deep plate and poured with Alfredo sauce, then sprinkled liberally with black pepper.
The mussels with Alfredo sauce are ready.
