How to make
Fry the finely chopped onion and garlic slices with a pinch of salt on a low heat.
Add the flour and stir until it's lightly fried.
Pour the white wine and continue to stir until a thin sauce is obtained. If you think it is too thick, add a little more wine or water.
Add the mussels and wait for them to open by stirring or shaking the cookware. Immediately remove them from the heat.
Serve them with chopped parsley, if desired. The Mediterranean mussels with sauce are great!
If you see a mussel that has not opened, throw it away, it means that it is not fit for consumption. Live and fresh mussels all open very quickly.
Another tip: Before cooking them, keep them in salt water to dispose of all their sand, if there's any.
And here's a trick: To keep your hands from smelling of garlic, keep your fingers under running water, while holding something that's metal. For example, rubbing a knife, fork. The smell from the hands immediately disappears.
