How to make
The red onion, garlic and carrot are finely chopped and stewed in the oil for 10 minutes.
Add the diced tomatoes, salt and sugar to taste, oregano and olives.
Continue cooking for another 10 minutes.
Transfer the tomato sauce into a baking tray.
The cleaned and cut into pieces mackerel is placed in the tray and baked for 20 minutes.
The baked mackerel is served with freshly chopped celery and a slice of lemon.
