  • horse mackerel - 2.2 lb (1 kg) fresh
  • lemon - 1 pc.
  • spelt flour - 1 cup
  • garlic flour - 1/2 tsp.
  • lovage - 3 pinches
  • ginger flour - 3 pinches
  • rosemary - 3 pinches
  • thyme - 3 pinches
  • black pepper - 3 pinches
  • salt
  • olive oil

How to make

The horse mackerel is cleaned and washed very well.

Place it in a baking pan and add salt, by spreading it all over the whole fish on all sides.

The lemon is squeezed and the juice is poured over the fish.

Cover the baking pan with foil and leave the fish in a cool place for 1 hour.

The garlic flour, lovage, ginger flour, rosemary, thyme and black pepper are finely grinded.

The mixture is added to the spelt flour.

Mix everything very well.

After they have been left long enough, each fish is rolled in einkorn flour with spices.

Arrange them on a board.

Fry the fish in heated olive oil, until they aquire a golden color.

Serve the fried horse mackerel with lemon.
