How to make
For the breading, beat the eggs, add cold water, oil, salt, pepper and baking powder.
Mix and flour with the starch and pour it into the egg mixture mix until a thick, homogeneous paste is obtained.
Cut the chicken fillet into small pieces, season with salt and pepper.
For the sauce, pour the ingredients into a bowl and mix until you get a thick sauce. Set aside.
Put the chicken pieces in the breading so that they cover and absorb the mixture.
Pour oil into a pan and fry the breaded chicken pieces until golden, placing several pieces in the pan and frying them. Divide them into several parts, because the larger the quantity, the more the heat in the pan is reduced and the breading will fall apart. I made this mistake and the breading came off on some of the pieces.
Take them out on kitchen paper, without putting them on top of each other, so that they do not soften.
When you have fried all the chicken pieces, remove the fat from the pan, clean and dry.
Pour the sweet and sour sauce into a dry saucepan.
Stir and cook for about 2 min.
Add the bites, toss to coat and remove from heat.
