"The most delicious spanish recipe with oyster mushrooms and jamón that you can imagine and try. Ideal for red wine, beer, and why not for a brandy."

Ingredients

  • oyster mushrooms - 300 g
  • jamón serrano - 140 g or bacon
  • white wine - 80 ml
  • olive oil - 3 tbsp.
  • fresh green garlic - 3 sprigs
  • garlic - 2 cloves
  • rosemary - 2 pinches, dried
  • black pepper - 2 pinches, freshly ground
  • flour - 1 tsp.
  • water - about 150 ml
  • parsley - 2 sprigs
  • chili peppers - 1 dry
  • salt - 2 pinches

How to make

Clean the mushrooms and garlic.

Cut the oyster mushrooms into medium-sized pieces and the two types of garlic into circles.

Roughly chop the jamón if it is in thin slices. In the case that in a whole piece, cut it into cubes. You can also use prosciutto or bacon, but the taste is far from the same, since jamón is much more aromatic and tasty, and it is not desirable to replace it with other dried meat.

Heat the olive oil in a pan and fry the garlic on low to medium heat very briefly. Add the jamon and chili pepper. Stir for a minute or two, then add the mushrooms, black pepper, a little salt, rosemary and increase the heat.

After another 2-3 minutes, during which you stir frequently, pour in the wine. Cook until the alcohol has evaporated and reduced.

Then pour half of the water with the flour dissolved in it and reduce the heat a little. Cook for about 15-20 minutes, stirring periodically during this time and adding the remaining water as soon as the dish remains fat.

At the end, all the liquid should have reduced and there should be very little creamy sauce left. The mushrooms should have become soft and tender.

Serve this wonderful appetizer sprinkled with fresh parsley. Ideal for red wine, beer, and why not for a brandy :)
