How to make
Boil the pasta with a little sea salt. In a large bowl, cut the tomatoes into 4s, add the crumbled mozzarella and season with olive oil, sprinkle it with plenty of grated parmesan.
Mix the still hot pasta with the cheeses and tomatoes, so that the heat will melt, soften them and homogenize the dish.
Once the pasta is cool, add the arugula, stir gently and serve.
