How to make
Wash the quinoa and put it on the stove with 2 cups of water. When it boils, it is turned off and left covered for 15 minutes on the stove, until all the water is absorbed.
During this time the spinach is washed and shredded or chopped and placed in a bowl.
Cut the peppers into pieces and add them to the spinach. The diced tomatoes and the onion (cut into crescents) are added to them.
Add the cooled quinoa and stir.
Prepare the dressing for the quinoa salad separately, by mixing the cottage cheese with the mayonnaise and mustard and flavoring it with freshly squeezed lemon juice.
The salad with quinoa and cottage cheese dressing is poured with the dressing and mixed well.
