How to make
The ciabatta is cut into two flat halves. Spread the inside of the top half with processed cheese and sprinkle with grated cheese. Place it in the microwave to melt the cheese. (A preheated oven can be used instead).
Meanwhile, spread hummus on the other half, then spread a little pesto on top.
Arrange a few slices of tofu, cucumber slices and a few slices of tomato on top.
One of the two halves is sprinkled with mixed salt with herbs.
The top half with the processed cheese is then sandwiched over the other and the ciabatta with hummus and tofu is ready to be served.
This is a very appetizing veggie sandwich, suitable for a hearty breakfast or lunch at the office.
