How to make
Mix 1 tsp (5 g) of yeast with 1/2 cup (100 ml) of water and 3.5 oz (100 g) of flour.
Leave the thick mixture in the refrigerator in a closed container for at least 12 hours.
Sift the flour into a deep bowl and add the remaining yeast and the warmed remaining water.
Mix the ingredients and add the salt, pressed garlic and the fermented mixture.
Knead an elastic dough and knead it on the worktop. If necessary, sprinkle it with more flour.
Place it into a lightly greased bowl. Cover it with a towel and leave it to rise for about 60 minutes.
Take it out, pull it on all sides and leave it to rise again. Repeat this several times.
At the last unfolding, remove it with greased hands and place it in a tray onto baking paper.
Spray it with garlic spray, sprinkle it with flour and leave it again for about 1 hour.
Spray water on the walls and bottom of the tray and bake the ciabatta at 390°F (200°C) in a preheated oven.
Cool it on a wire rack and then serve it.
The ciabatta with garlic and yeast is very tasty.
