How to make
Roast the eggplants preferably over a fire for a smoky flavor. Let them cool and peel them.
Peel the pink tomato and cut it into small pieces. Cut the eggplant and garlic into thin slices.
Chop the fresh parsley and basil and add them to the vegetables.
Add the mayonnaise, yogurt, salt, olive oil and vinegar, as well as some crumbled hard goat cheese (it should have a parmesan texture).
Mix the autumn eggplant salad well and serve it sprinkled with crumbled goat cheese.
