How to make
Wash the okra and remove the stalks. Boil water with a little salt and 1-2 tbsp. vinegar and blanch the okra for 5 minutes. Then strain it well for about 10-15 minutes.
Beat the eggs and add corn flour, pinch of nutmeg and curry and beer. Beat until you get a mixture.
Divide the okra into 2 parts because you will fry it twice. First roll one part in flour, then in breadcrumbs and, using a slotted spoon, gently drain and drop them into the heated oil.
Remove and drain the okra on a wire rack or kitchen paper and repeat the procedure with the other half.
