How to make
Wash the chicken and cut it into portions.
Clean the okra and soak it in vinegar (1 cup) and water (2 cups) for 30 minutes. Fry the chicken portions in oil and take them out.
Fry the finely chopped onion in the same fat. Add flour and fry it. Pour tomato puree mixed with a little water.
Boil the sauce and when it thickens, add as much salt as you like. Add the fried chicken and the okra, strained and rinsed with water. Add peeled and diced tomatoes.
Pour 2-3 tea cups of water and cook the chicken with okra until it's done.
Just before removing it from the heat, sprinkle the stew with chopped fresh parsley.
