Ingredients

  • chicken drumsticks - 2.2 lb (1 kg)
  • okra - 10.5 oz (300 g)
  • onions - 1
  • peppers - 3 sliced green or red
  • tomato sauce - 2 tbsp.
  • garlic - 1 tbsp. ground
  • vinegar - 2 tbsp.
  • coriander - chopped to taste
  • salt
  • paprika
  • smoked paprika
  • black pepper - to taste
  • olive oil - 2 tbsp.

How to make

Although this recipe takes almost two hours to prepare, it adds something special to any dinner. In this chicken stew recipe, it is fried until crispy and it is then simmered with the okra and other ingredients.

And that's how you make this delicious and healthy Greek Okra Stew. You can serve everything with delicious rice, potatoes, pasta or just with fresh bread to dip in the stew.

I seasoned the chicken with salt, garlic, black pepper, paprika and vinegar and let it marinate for 1 hour. Place the okra in a bowl with the vinegar and 1 tablespoon of salt and let it sit for 30 minutes to an hour, stirring a few times while you prepare the rest.

I put 2 tablespoons of olive oil in a pan, added the seasoned chicken drumsticks and fried until golden, add the onion and chopped peppers, stew well, add the tomato sauce, add water until it covers the whole chicken, cover the pan and cook it on high heat 20 minutes.

I washed the okra.

I rinsed and strained the okra, then placed it on top of the chicken without stirring. I squeezed lemon juice over the okra. I covered the pan and let it simmer with the chicken for another 20-30 minutes.

If you like coriander, add it to the okra stew chopped before serving. When done, remove the chicken, stir the okra into the sauce and place it on a plate with the chicken.

Serve it with rice or pasta and garnished with fresh parsley and crispy bread. Enjoy!
