How to make
Cut the chicken into small cubes about 1/2 x 1/2″ (1 cm x 1 cm). Marinate it with olive oil, soya sauce, a little sugar and a little salt. Leave as is for about 1 hour in the refrigerator. Soak the boletus mushrooms in water and once they swell, drain them.
Pour olive oil in a pan. Put the chicken in without the marinade and let it to saute until whitened. Add the boletus, whole garlic cloves (if it's wintertime, you can chop them finely for a richer flavor) and onion, diced.
Mix the curry and flour in a cup. Add the cream and stir until you get a uniform mixture. Add the creamy mixture to the chicken and reduce the heat down as low as possible. Leave it to simmer for about 5 minutes and then the chicken curry with mushrooms is ready.
