How to make
Cut the fat from the duck breast, wash and make an incision to form a pocket.
Prepare the stuffing for the duck roulades by chopping the rosemary, garlic, lemon peel and adding them to the parmesan. Add salt and black pepper.
Stuff the duck and pinch the opening with toothpicks. Season the finished roulades with black pepper and salt. Let them rest.
Prepare the sauce by finely chopping the garlic and onion. Cut the pepper and pour it into a pan with fat. Fry. Add the flour, after a few minutes the white wine and honey.
Pour the chicken broth, thyme and cook for a few minutes until thickened. Season with black pepper and salt.
Heat the oven to 390°F (200°C). Place the roulades in a non heated pan, skin side down. Leave them for 5 minutes, flip and bake for another 2 minutes.
Wrap them in aluminum foil and bake in a tray for another 7 minutes. Remove and let them rest.
Serve the duck roulades with delicious sauce for a special occasion.
