How to make
Boil the potatoes, peel and mash them to paste. Add the flour, eggs, salt to taste and knead a dough. Sprinkle a countertop with some flour and roll thin and long strips of dough.
Cut pieces with a length of 1″ (2.5 cm). Shape them gently and drop them to cook in boiling salted water with the lid on. Let the dumplings boil until they float up to the water's surface. Remove them with a slotted spoon and place them in a large platter in a row.
Sprinkle them with feta cheese and arrange a second row of dumplings on top. Fry the butter and parboil the dumplings.
