"You`ll be pleasantly surprised about the kind of tenderness and sweetness that lemon and mandarin juices provide chicken meat - true perfection!"

Ingredients

  • chicken fillet - 2.5 lb (1.2 kg), diced
  • mushrooms - 5.5 oz (150 g) small (caps only), sprinkled with a little lemon juice
  • onions - chopped into coarse pieces
  • for the marinade
  • lemons - 5 tablespoons + 1/2 tsp grated lemon rind
  • mandarins - 5 tablespoons, juice
  • oranges - 1/2 tsp, finely grated, orange peel
  • ginger - 2 tablespoons grated fresh
  • onions - 1 small head, grated
  • garlic - 1 1/2 tablespoons, powdered
  • soya sauce - 7 tablespoons, dark
  • black pepper - 1 tsp, freshly ground
  • vodka - 3 tablespoons, or brandy
  • oil - 4 tablespoons
  • sesame oil - a few drops

How to make

Mix all the spices for the marinade in a bowl and add the chopped chicken. Let it stand in the refrigerator for 30 minutes. Drain the chicken of excess marinade.

Make the skewers, alternating between onion, chicken, mushrooms. You can also add chopped peppers, zucchini or bacon bits if desired.

Sprinkle the skewers lightly with a little oil and bake on a preheated grill.
