How to make
Boil the rice with a little salt and olive oil, then drain and pour it into a large bowl. Cut the cherry tomatoes in two and chop the tuna fillet.
Heat a little oil in a pan and fry the corn for a few minutes. Add it to the rice along with the tuna, olives and tomatoes. Pour on a dressing of olive oil, vinegar, mustard, salt and black pepper.
Sprinkle it with chopped fresh parsley and serve.
