  • flour - 2.5 oz (70 g)
  • salt - a pinch
  • butter - 1 tbsp.
  • raisins - a handful (soaked in rum)
  • powdered sugar - for sprinkling

How to make

Kaiserschmarrn is traditionally served with freshly made plum jam.

To prepare the jam, wash the plums and remove the pits. Boil them for about 7 minutes with the sugar, water and rum and set them aside.

Separate the egg whites and beat them with the salt.

In another bowl, put the egg yolks, sugar, milk and flour and mix them using a mixer.

Add the egg whites, mixing gently with a spatula.

Heat a pan and melt the butter.

Pour the batter, sprinkle with raisins and cook over medium heat for about 5 minutes.

Divide the large pancake into 3-4 pieces and using a spatula, flip them over.

After about 2-3 minutes, tear the pancake into even smaller pieces and cook for another 2-3 minutes.

Arrange the pieces on serving plates, sprinkle with powdered sugar and pour the Kaiserschmarrn with the plum jam.
