If the avocado is dark green, it is well ripe and is eaten immediately.
Cut it in half and remove the stone. The brown skin around the stone is also removed, because it is bitter.
It is cut into squares and they are removed from the skin with the help of a spoon.
Puree along with sesame tahini, add lemon juice and crushed garlic cloves.
Season with salt and parsley. Pour the puree into a bowl and cool it.
