How to make
Clean the snails very well and put them to boil completely. Then remove them from their shells and clean the meat. Save a few shells for decoration. Heat the oil in a wide pan and put the snails to get braised.
Then add a little chopped onion and garlic, stir and pour in the white wine. Add the bay leaf and cook until the liquid evaporates. Finally, season with the spices. Serve the fried snails with a light tomato sauce, made from the fried grated carrot and the peeled tomatoes, cut into small pieces, which need to boil until the liquid is reduced.
Season the sauce with the spices, pour some of it onto a plate and place some of the snails on top.
