  • quinces - 2.2 lb (1 kg)
  • sugar - 1.8 lb (800 g)
  • lemons - 1
  • cloves - 4 cloves
  • cardamom - 2 grains
  • cinnamon - 1/3 tsp.

How to make

For the preparation of the pestil, well-ripened fruits are used. Wash them well with cold water.

Remove the seeds from each quince and cut them into 6 pieces. Wash the lemon and cut it as well.

Pour water into a pot and let it boil. Add the quinces, lemon and aromatic spices. Boil for about 15 minutes. Strain the quinces from the water. Remove the lemons and spices.

Add the sugar and boil over low heat for about 1 hour. You have to stir occasionally so it doesn't burn. After the quinces have changed color, mash them and return them on the stove for ten minutes (constantly stirring). Line a suitable tray with baking paper.

Pour the mixture (it should be no more than 1.5 cm thick), smooth it out and let it cool. Leave it in a ventilated and dry place for about 4-5 days.

Cut it into cubes and roll them in sugar. Store them in a box in a cool place (the refrigerator).

The homemade quince pestil is ready.
