How to make
Oven - 340°F (170°C).
A suitable vessel or baking in a water bath.
I used an oblong cake tin - 9.5x5″ (24x13 cm).
Starts off by making the caramel.
Pour the sugar and water into a pot over moderate heat. Leave the sugar to melt to a pleasant brownish-golden color. It is then distributed in the mold in which the flan will be baked. It is left aside.
In a pot, heat the milk over medium-high heat until it boils. Remove it from the heat and cool it to 100°F (37°C).
Beat the mascarpone and eggs in a bowl. Add the milk and stir until completely mixed with the mascarpone and eggs. I used a mixer on very low speed.
The mixture is poured in prepared mold over the caramel.
The baking pan is placed in a larger one and hot water is poured over the side.
Bake in a preheated oven at 340°F (170°C) for about 55-60 minutes. It should start to brown on top, but in the middle it will be a little soft. After cooling it hardens.
Leave it in the water until cool, then refrigerate for at least 4 hours.
Before serving, it is turned over in a suitable plate.
