How to make
Wash and soak the spelt grains in water the night before so that they are ready in the morning.
I do that late at night, but before I go to bed I change the water with fresh water.
The next day, strain and rinse the spelt and put it to boil. Since it will be well hydrated, it will not take long to cook. Taste the grains and remove them from heat when done.
Mine take 15 minutes, then I let them sit in the water for a while longer. This way, they remain harder, but at the same time tender.
Strain well and when cool (maybe not completely), mix with honey, cranberries, roughly chopped walnuts and chopped dates.
Pour into a bowl or glass, add thin slices of apple on top, sprinkle with a crushed Digestive biscuit and enjoy a healthy breakfast that will fill you up and fill you with energy.
