How to make

Clean the mussels well from all of the seaweed and shell growth. Brush with a stiff brush or kitchen wire.

Heat the griddle over medium to high heat (you can also use a wide pan), spread the surface with some of the olive oil and save the rest for sprinkling when serving.

When it begins to smoke slightly, place the mussels at a distance from each other so that they have room to open up well. If they don't all fit together in the pan or on the griddle, cook them in two batches.

They need a short time to open up, about 2 minutes. Once this happens, immediately transfer them to a suitable serving plate. Drizzle with the olive oil and black pepper. If desired, add chopped parsley.
