How to make
Sift the flour and salt into a deep bowl, add the butter and mix until it becomes crumbly.
Then add the lightly beaten egg and knead the pie dough, wrap it in foil and put it in the fridge for 50 minutes.
Clean the pumpkin, remove the seeds and cut it into cubes. Put it in a pan, add a little water and leave it to simmer until it softens and the liquid has completely evaporated.
Blend until a puree is obtained.
Roll the dough onto a lightly floured low round baking pan. Then put parchment paper on top and something heavy like a bowl of beans to press down on the pie base, so that it doesn't puff up while baking.
Bake for 15 minutes at 370°F (190°C).
Put the pumpkin in a bowl, add two eggs, sugar, cream, spices and salt. The mixture is poured onto the baked pie base.
The pumpkin pie is baked for 50-55 minutes at 360°F (180°C).
