Ingredients

  • baby spinach - 2.5 oz (70 g)
  • white cheese - 3.5 oz (100 g)
  • eggs - 1 pc.
  • walnuts - 0.7 oz (20 g), roasted
  • corn - 1.4 oz (40 g), boiled
  • bread - 1 slice, from a baguette
  • breadcrumbs - for rolling
  • balsamic reduction - with orange
  • olive oil
  • salt
  • cherry tomatoes - optional

How to make

Wash the baby spinach and tear it if necessary with your hands.

Put it in a suitable plate. Cut the white cheese into cubes, roll each cube first in breadcrumbs, then in beaten egg and finally again in breadcrumbs.

Fry the cheeses (in this case in an air fryer), but you can also fry them in a pan with fat until golden.

Then put them on top of the baby spinach along with the walnuts (broken into small pieces), the corn and the croutons (which we made in advance by cutting the bread into small pieces, seasoned them with olive oil, salt and baked them in the oven).

Season the spinach salad with olive oil, salt and balsamic reduction with orange.

If desired, you can also add cherry tomatoes.
