"Mackerel in a baking bag and a bottle of white wine in a glass - what more could you want"

Ingredients

  • mackerel - 2 pcs. (each about 350 - 400 g)
  • carrots - 2 pcs.
  • onion - 2 onions
  • tomatoes - 2 - 3 pcs., or from a jar
  • garlic - 3 - 4 cloves
  • dill - 3 - 4 sprigs fresh
  • lemon juice - freshly squeezed from 1/2 lemon
  • lemons - 1/2 pcs. sliced
  • olive oil - 1/4 cup
  • black pepper - 1/4 tsp. ground
  • cumin - 1/2 tsp. ground
  • salt - 1/2 tsp.

How to make

Clean and wash the mackerels. Cut the carrots into long sticks. Peel the onions and tomatoes and cut them into slices. Cut the peeled garlic into slices.

Sprinkle the inside and outside of the mackerel with salt, black pepper and cumin.

Insert the sliced garlic cloves and a whole sprig of dill (along with the stem) into their bellies.

Drizzle the lemon juice and a little olive oil inside and out and leave them to flavor for 30 minutes.

Transfer the chopped tomatoes and onions into the baking bag. Sprinkle with spices - salt, black pepper and cumin and pour the remaining olive oil.

Tie the baking bag and put the baking pan in a preheated oven at 360°F (180°C) and bake in the middle of the oven with a fan on for about 35 minutes.

Debone the baked mackerel.

Transfer the fish fillets into suitable serving plates and garnish with the steamed vegetables. Garnish to your taste with lemon slices and dill sprigs.

A bottle of white wine is the perfect company for this delicious dish!
