How to make
Grate the white chocolate. Clean the strawberries and cut them into pieces. The weight indicated in the recipe is of peeled strawberries.
Soak the gelatin in 4/5 cup (200 ml) of cold water and leave it to hydrate.
In a clean bowl, beat the cream until creamy and put it in the refrigerator.
Place a saucepan with the chopped strawberries, grated white chocolate and sugar on the stove. Heat to 80°C and stir for about two minutes or until the chocolate has melted.
Remove from the heat, add the gelatin (well strained from the water) and blend.
Leave the strawberry mixture to cool (20 minutes) and mix with the cream, stirring gently to keep it fluffy.
Divide the strawberry mousse among 4 cups and refrigerate for 2 hours.
Serve the strawberry dessert garnished with sliced strawberries and grated white chocolate.
