How to make
Boil the macaroni in salted water. When they are ready (be careful not to overcook the macaroni), pour out the water, pour cold water over the cooked macaroni and strain them in a large colander.
Pour oil or olive oil (3 tbsp.) into a pot. Put chopped small onion (1 tbsp.), also the chopped white part of a stalk of green garlic and boiled beetroot cut into very small pieces (100 g).
Turn on the stove. Heat it, stir the vegetables several times, sprinkle black pepper, curry, salt to taste and pour warm water and tomato juice.
Add tomato puree (1 tbsp.), sugar (1 tsp.). Boil the sauce to the desired thickness, stirring occasionally as soon as it starts to thicken.
A few minutes before removing the sauce from the heat, sprinkle oregano and finely chopped parsley.
Put the strained macaroni in the sauce, stir well and carefully, in order to flavor the sauce and serve.
The easy lean macaroni with tomato sauce are ready.
