How to make
Cut the zucchini in half, cutting each half lengthwise into sticks. Put them in a deep bowl, pour a little oil, garlic powder, salt, black pepper and paprika and mix them well.
When I have time, I leave them in the fridge to absorb the spices. I heat my oven to 390°F (200°C).
I put baking paper in a tray, by lightly greasing it.
In a bowl, I beat as many eggs as the number of zucchini I cut. I usually make 3 and there are always leftovers (there are two of us).
Roll the zucchini first in flour, then in the beaten eggs and finally in breadcrumbs or corn flour. Arrange them in the tray and bake for about 40 minutes, until they acquire a golden color and slightly brown.
I prepare the sauce for them from 1 tsp. mustard, 1 tbsp. light mayonnaise and 4 tbsp. yogurt. I add finely chopped garlic, a little salt, black pepper and mix well. I am a big fan of chives and if I have them on hand, I add a little of them too - they add a very nice taste.
