Ingredients

  • sorrel - 10.5 oz (300 g)
  • spring onions - 2 stalks
  • oil - 1/2 cup
  • salt
  • black pepper
  • rice - 1/2 cup
  • parsley
  • eggs - 1 pc.
  • yogurt - 3 - 4 tbsp.

How to make

Clean the onion and sorrel. Cut it into suitable pieces.

Heat the oil and stew the vegetables.

Pour about 1 1/2 liters of warm water. Let the soup boil for about 15 minutes.

Add the washed rice and boil it until the rice is cooked.

Beat the egg with the yogurt. Remove the soup from the heat. Add 3-4 tbsp. from the soup to the egg mixture.

Stir and pour the mixture into the soup in a thin stream.

Stir and place the vegetable soup back onto the heat, by reducing the heat. Boil for another 3-4 minutes. Season with salt and black pepper.

Garnish with parsley when serving.

The sorel and rice soup is ready.
