How to make
For the vegetable puree, peel and dice the turnip and potato, then finely chop the onion.
Place the turnips and potato in medium-sized pot; pour water and add a little salt. Boil, cover and leave it to simmer for about 15-20 minutes, or until both vegetables soften (test with a fork).
Meanwhile, heat the butter in a small pan over medium heat, add the onion and sauté until soft.
Strain the potatoes and turnips well and pour them into the food processor. Add the sautéed onion, lemon juice, salt and black pepper. Blend until smooth, by gradually adding the milk or cream to the mashed potatoes.
The Potato and Turnip Puree is an ideal side dish.
