How to make
Put the potatoes in boiling salted water and let them boil. Drain them and peel them while still warm.
Mash them. Peel the garlic and crush it with a little salt. Add it to the mashed potatoes. Add 1/2 cup of warm water.
Stir to mix the products. Stir constantly and add the olive oil and freshly squeezed lemon juice.
Stir until you get a smooth homogeneous mass.
