How to make
Potato and carrot puree for a side dish or a spread.
Peel and cut the carrots and potatoes.
In a large pot with a lid, boil the carrots in lightly salted water for about 5 minutes;
Add the diced potatoes and enough water to cover all the vegetables.
Boil, reduce the heat until the water is simmering and continue to boil in a covered pot for another 20 minutes, or until all the vegetables soften.
Strain well and return them back into the pot.
Add the milk or cream and 2-3 tbsp. of butter to the vegetables.
Mash the vegetable puree a few times, until the mixture becomes smooth.
Add as much salt and black pepper as you like to the potato and carrot puree.
