How to make
These sweet puff pastries, called Miguelitos, are traditional to the Spanish province of Albacete.
What sets them apart from regular cream puff pastries is the flavor of cinnamon, honey and citrus.
They are prepared very easily in a few steps:
Heat the oven to 390°F (200°C).
Thin out the puff pastry with a rolling pin and cut out squares with 5 cm sides. Arrange them in a baking pan on a layer of baking paper and bake for 15 minutes.
For the cream, heat the milk with the sugar, cinnamon and citrus peels. Beat the eggs and yolks and mix the flour well with them so that there are no lumps.
Remove the cinnamon stick and pour the eggs with the flour into the hot milk in a thin stream.
Beat with a wire whisk and boil the cream for about 10 minutes over moderate heat or until it thickens.
Once ready, leave it to cool, covered with a layer of cling film clinging to it.
Cut the baked squares lengthwise through the middle and fill the inside with cream and cover them with the top again. Spread a little honey on top (if it is hard, dilute it with a few drops of water).
Sprinkle the puff pastries with powdered sugar mixed with a little cinnamon powder and serve them.
