"A filling vitamin salad that we can eat every day"

Ingredients

  • broccoli - 7 oz (200 g)
  • green peppers - 1 pc.
  • red peppers - 1 pc.
  • carrots - 2 pcs. (large, 200 g)
  • pumpkin seeds - 40 g peeled, raw
  • parsley - 2 - 3 stalks (the leaves and part of the stalks)
  • peaches - 1 pc.
  • Dressing
  • olive oil - 2 tbsp (30 ml)
  • lemon juice - 2 tbsp (30 ml) freshly squeezed
  • mustard - 1 and 1/2 tsp.
  • honey - 1 tsp.
  • salt - 3 pinches or to taste
  • black pepper - 2 pinches
  • Ginger Mayonnaise
  • eggs - 1 pc.
  • ginger - 1.1 oz (30 g) peeled root
  • oil - 4/5 cup (200 ml)
  • lemon juice - 1 tsp.

How to make

Clean and wash the vegetables and fruit and finely chop them. It is best to grate the carrot.

A suitable and easier option is to put everything in a blender and blend for seconds on medium speed.

Prepare a dressing by mixing all the products listed for it. Pour it over the fresh vegetables and fruit, add the pumpkin seeds and mix.

For the mayonnaise beat the egg in a tall, narrow container. Pour the lemon juice, a little of the oil, the salt and the ginger pieces.

Position the liquidizer to rest on the bottom of the container and turn on the appliance without moving it. When the mixture turns white on the bottom, start pouring in the remaining oil in a thin stream and at the same time pull up the liquidizer slowly until completely emulsified and you get a thick ginger mayonnaise.

Serve the vitamin salad by drizzling it with some of the mayonnaise.
