Ingredients

  • soba noodles - 1 package, about 400 g
  • peanut butter - 1/2 cup
  • ginger powder - 1/4 tsp.
  • sesame oil - 2 tbsp.
  • soy sauce - 4 - 5 tbsp.
  • rice vinegar - 2 tbsp.
  • honey - 2 tbsp.
  • water - 1 1/2, room temperature
  • carrots - 1 pc.
  • spring onion
  • cucumbers
  • sesame seeds

How to make

The noodles are cooked according to the instructions on the package.

When they are ready, they are strained and mixed with the oil. Stir to distribute it well, so that they don't stick together.

The ingredients for the dressing (without the water) are mixed and stirred until a paste is obtained.

Little by little, water is added, until the desired consistency is obtained - it should still be thick, but it can be poured and mixed evenly with the rest of the products.

Strips are made from peeled carrots. Cut the spring onions into small pieces. The cucumber is cut into circles and then into sticks.

Place the soba noodles in a bowl and mix them with the dressing. Spread the vegetables on top and sprinkle with sesame seeds.

The soba noodle salad with peanut sauce is ready.
