How to make
Crush and mix the yeast with the sugar in half the warm water and leave it for 10 minutes to activate. Mix the flour with the salt, olive oil, the remaining water and the activated yeast in a pan.
The olives are pitted and cut into large pieces, the rosemary leaves are finely chopped. Pour them into the mixture and knead a medium soft dough.
It is smeared with fat and left to rise in a warm place covered with foil for 2-3 hours.
In a small baking pan on baking paper lightly grease it with olive oil and sprinkle with corn flour.
The dough is no longer kneaded, just placed carefully on the paper, shaped like bread and sprinkled with a little corn flour on top.
The oven is heated to 360°F (180°C) and we bake the bread for 35-40 minutes until a golden crust is obtained. Remove and place it onto a wire rack and cover it with a towel until it cools, only then cut it with a knife.
