"You haven`t tried more fluffy and at the same time delicate pancakes"

Ingredients

  • for 8 pancakes
  • flour - 4.6 oz (130 g)
  • sugar - 1.6 oz (45 g)
  • vanilla sugar - 0.3 oz (8 g)
  • cottage cheese - 12 oz (350 g) squeezed
  • salt - a pinch
  • eggs - 1 pc.
  • berries - for decoration
  • oil - for frying

How to make

Mix the egg with the cottage cheese in a deep bowl.

Add sugar, vanilla sugar and salt to them. Beat by hand until a homogeneous mixture is obtained.

Then add the flour. Stir for a few more minutes.

Heat a little fat in a wide and flat pan on medium heat.

One pancake is one full tablespoon.

Bake the Russian blini for 2 minutes on each side.

Decorate the Russian pancakes with berries.

You can also pair the fluffy cottage cheese pancakes with maple syrup.
