How to make
Mix the egg with the cottage cheese in a deep bowl.
Add sugar, vanilla sugar and salt to them. Beat by hand until a homogeneous mixture is obtained.
Then add the flour. Stir for a few more minutes.
Heat a little fat in a wide and flat pan on medium heat.
One pancake is one full tablespoon.
Bake the Russian blini for 2 minutes on each side.
Decorate the Russian pancakes with berries.
You can also pair the fluffy cottage cheese pancakes with maple syrup.
