How to make
The kidneys are cleaned, washed and cut into medium-sized pieces.
Soak them for about an hour in water with 1 tbsp. vinegar.
Cut the onion and mushrooms and fry for 3-4 minutes in the well-heated fat.
Take them out in a bowl and fry the kidneys in the same fat.
At the beginning, they release water, which you can pour 2-3 times into the bowl with the mushrooms and onions, so that in the end the kidneys are not boiled, but fried.
When the kidneys begin to acquire a pleasant color, return the rest of the ingredients from the bowl into the pan, add the tomato juice in which you beat and 1 tbsp. flour, add the spices and leave it on the stove for a few more minutes.
Stir, until you get a sauce of the desired thickness and consistency.
The fried kidneys with mushrooms and onions are very tasty.
