How to make
Boil the meat in plenty of water with a little salt. Strain the broth, debone the chicken and chop or tear it into pieces for the soup.
Heat the oil in a pot and fry the onion, carrots, parsley and celery - finely chopped.
Add salt and let the liquid from the vegetables evaporate and soften nicely. Then pour the broth and wait for it to boil.
Cook on medium heat for about 20 minutes. If necessary, add broth or water.
Meanwhile, wash the quinoa. Pour it into the soup and boil for another 15 minutes or until the quinoa is swollen.
In the last five minutes, add the meat and cook everything together. Season the chicken soup with salt, no other seasoning is necessary, only when serving you can sprinkle with black pepper, in addition to chopped parsley and lemon juice.
The Chicken and Quinoa Soup is ready.
