  • pineapple - 1/2 pc. fresh
  • pine nuts - 3 tbsp. (optionally pan - fried)
  • Honey Dressing
  • honey - 1.4 oz (40 g)
  • lemon juice - 2 tbsp (30 ml) freshly squeezed
  • black pepper - 1 pinch, finely ground

How to make

Peel the pineapple and remove the hard core.

Cut it into very thin pieces using a sharp knife. The carpaccio should always be very fine and translucent.

Arrange on plates without overlapping the pieces.

Sprinkle with pine nuts, if desired, they can be lightly toasted in a dry pan.

For the dressing, mix honey (liquid) with freshly squeezed lemon juice and black pepper.
