How to make
Peel the pineapple and remove the hard core.
Cut it into very thin pieces using a sharp knife. The carpaccio should always be very fine and translucent.
Arrange on plates without overlapping the pieces.
Sprinkle with pine nuts, if desired, they can be lightly toasted in a dry pan.
For the dressing, mix honey (liquid) with freshly squeezed lemon juice and black pepper.
Drizzle some Honey Dressing over the portions and serve them.
