How to make
Peel the carrots and daikon and cut them into thin strips with the help of a peeler. Cut the beetroot into cubes. Put all of the vegetables in a deep bowl.
For the dressing, grate the ginger in a bowl. Add lemon juice, honey and mustard.
Finely chop the shallots and add them as well. Add salt to the mixture.
Pour olive oil in a thin stream and stir vigorously, until the dressing is smooth and homogeneous.
Pour the vitamin salad with the dressing and then stir it and serve it.
