Ingredients

  • sea bass fillet - 2 pcs. (about 320 g)
  • asparagus - 4 to 6 pcs.
  • spring onions - 2 stalks
  • cherry tomatoes - 4 - 5 pcs.
  • mayonnaise - 2 tbsp.
  • black pepper - freshly ground
  • olive oil - 2 tbsp.
  • salt - by taste
  • lemons - for serving

How to make

Wash and dry the fish fillets with kitchen paper.

Turn on the oven to heat up to 370°F (190°C) with fan.

Take one large or two smaller sheets of baking paper, depending on whether you want to bake them together wrapped in one packet or in two individually wrapped packets.

Spread the paper with olive oil and lay out the freshly chopped spring onions. Place the asparagus on top (2-3 for each fillet), which have been cleaned from the tough ends and washed. Add salt and a little fat.

Lay the sea bass fillets on top, lightly salted and skin side down. Spread with the mayonnaise and sprinkle with freshly ground black pepper (coarsely ground). Finally, arrange the cherry tomato halves on top and also lightly salt them.

Fold and seal the paper like packets without sticking it tightly to the sea bass.

Put them in the baking pan and put it in the already heated oven.

Bake the fish for 25 minutes and serve it by slightly opening the packets. Garnish it with lemon slices.

A very fine dish, easy and quick to prepare. Perfect for guests or for a romantic dinner.
