How to make
The butter, powdered sugar, vanilla and egg are mixed in a bowl and gradually add the ground almonds, flour, cinnamon and spices.
Knead the soft and elastic dough, which is wrapped in cling film and it is refrigerated for an hour.
Then the linzer dough is rolled out into about 0.2″ (4-5 mm) thick crust and with a metal cookie cutters, cut out heart-shaped cookies or others to your liking. Half of them are cut into circles (I used the hole of the opening of a fluid funnel for the holes).
It is a good idea to cut the holes directly into the tray, in which it is lined with baking paper, so that it doesn't spoil the shape of the cookies. The cut outs are collected and new cookies are formed, until your run out of dough.
Bake Valentine's Day Cookies in a heated oven at 320°F (160°C), in the middle of the oven and with the fan on for about 8-10 minutes.
The baked linzer cookies are left to cool well, after which those with a hole are sprinkled with mixed powdered sugar and vanilla and the whole hearts are smeared with raspberry jam or marmalade.
The linzer cookies are then stuck two by two and stored in a box, by placing baking paper between the rows.
