Ingredients

  • white chocolate - 1 lb (450 g) for melting
  • butter - 0.7 oz (20 g)
  • honey - 0.5 oz (15 g)
  • cream - 2.3 oz (65 g) 35% fat content
  • liqueur - 1 tbsp. or rum, brandy
  • red confectionery paint - 3 drops

How to make

Heat the cream over low heat and grate 5.3 oz (150 g) of the white chocolate to it. Add the butter, honey and liqueur and mix until you have a smooth and thick homogeneous mixture.

Add the paint and mix well. You can make the color a soft pink or a deeper red - whatever you like.

Pour it into a small plastic bag or pouch with a fine tip and refrigerate for 2 hours.

Grate the remaining 10.5 oz (300 g) of chocolate and heat over very low heat until it softens, but does not liquefy too much.

Use it to fill the Valentine's Candy molds - preferably silicone.

Place them in the freezer to harden for an hour or two, depending on the size.

Remove the hardened candies from the molds and decorate them with the pink ganache, by drawing hearts, roses or whatever your imagination comes up with.

If you're not using a piping bag with a special tip, but you've filled the mixture into a piping bag, cut off a bit of the tip and pipe out your decoration that way.

Refrigerate the beautiful festive candies until serving time.
