Ingredients

  • potatoes - 1.5 lb (700 g)
  • salt
  • butter - 4 tbsp.
  • frozen vegetables mix - 0.9 lb (400 g)
  • vegetable broth - 4/5 cup (200 ml)
  • eggs - 3 pcs.
  • yellow cheese - 3.5 oz (100 g) grated

How to make

The potatoes are boiled in salted water. Peel them and cut them into slices.

Arrange the potatoes in a greased baking pan, by placing the carrots, cauliflower and broccoli between them and on top of them.

The vegetables are salted, poured with the vegetable broth and small pieces of butter are placed on top of them.

The potato casserole is placed in the oven and baked at 390°F (200°C) for half an hour.

Beat the three eggs with the grated cheese in a bowl.

The casserole is removed from the oven and poured with the egg mixture.

Place it back into the oven for another ten minutes, or until it has nicely browned.
